Corn
Corn, also known as Maize is rich in vitamin C, an antioxidant that helps protect your cells from damage and wards off diseases like cancer and heart disease.
Bell Peppers
Bell Peppers are actually a Fruit! Red Bell Peppers are sweeter and have 2x the Vitamin C of Green Bell Peppers because bell peppers sweeten as they ripen.
Potatoes
With most of its nutrients just below the skin, baked potato (w skin) is a good source of dietary fiber (4g). Potatoes also provide more Potassium than Bananas.
Broccoli
Broccoli is low in calories and high in micronutrients, including vitamin C, vitamin A, and vitamin K. Steam your broccoli to lower cholesterol and eat the stalk and florets for its full nutritional value.
Spinach
